How do Koreans describe kimchi at different stages of fermentation?

Today, let’s learn three useful Korean words: 신김치 (sin-kimchi), 묵은지 (mugeunji), and 겉절이 (geotjeori).

1. 신김치 (sin-kimchi)

신김치 means kimchi that has developed a noticeably sour taste through fermentation.

The word 신 comes from 시다(sida), which means “to be sour.” In English, it can be explained as sour kimchi or well-fermented kimchi.

Example

신김치로 김치찌개를 만들었어요.
I made kimchi stew with sour kimchi.

Sour kimchi is especially good for cooked dishes such as kimchi stew and kimchi fried rice.

2. 묵은지 (mugeunji)

묵은지 is kimchi that has been fermented for a long time. It usually has a deeper, richer, and more complex flavor than regular sour kimchi.

In English, it can be explained as aged kimchi.

Example

묵은지는 깊은 맛이 나요.
Mugeunji has a deep, rich flavor.

신김치 and 묵은지 are related, but they are not exactly the same. Sin-kimchi emphasizes the sour taste, while mugeunji emphasizes the long aging process and its deep flavor.

3. 겉절이 (geotjeori)

겉절이 is freshly seasoned kimchi that is eaten before it has had much time to ferment. It is known for its fresh, crisp texture.

You can describe it in English as fresh kimchi, freshly made kimchi, or unfermented kimchi. Calling it a fresh kimchi salad can also help beginners understand the idea, although geotjeori is still a type of kimchi—not simply a salad.

Geotjeori is crisp and fresh.
